Alpha-Amylase

We distinguish between saliva-amylase and pancreas-amylase. Saliva amylase or α amylase is produced by the mouthsalivary glands.

The pancreas produces pancreatic amylase, which is more important than saliva amylase. The release of pancreatic amylase occurs mainly through hormonal stimulation (cholecystokinin).
