The gastric juice is a clear and aqueous solution which contains gastric acid (about 0.5% hydrochloric acid on an empty stomach), mucus, mucus, [ ] and [ ]. (protects the mucous membrane of the stomach from hydrochloric acid), the protein-splitting enzyme pepsin and the intrinsic factor (a protein responsible for the absorption of vitamin B12 in the intestine). 2 to 3 litres of gastric juice are produced daily.

The gastric acid has a pH value of about 1-1.5 (fasting) to 2-4 (full). It serves the digestion of food, in particular the hydrolytic cleavage of proteins into polypeptides) and has a bactericidal effect.
