Ferment, specific protein that accelerates a certain chemical reaction. Only through this biocatalytic effect, the reaction rates required for energy generation and metabolism of living systems are reached or reaction directions are determined.

Enzymes are high-molecular proteins formed in the cell that control the metabolism of organisms as biocatalysts. Their tasks include ensuring cell supply, removing or degrading toxic substances, mobilizing other substances such as fats and glycogen from the depots and triggering and accelerating the processes (catalysing) necessary to produce the energy required by the organism.

Enzymes enable biochemical reactions in the body to take place more rapidly than normal. Like "lock and key" there is a strict specificity of the respective enzyme to its substrate.

Many enzymes, so-called key enzymes, often need a helper to function. These are called coenzymes and often consist of vitamins, mineral substances or trace elements. The protein content of this enzyme complex is called apoenzyme. The complex consisting of apoenzyme and coenzyme is called holoenzyme. Which means about as much as "total enzyme."
